Living in the Philippines means there is an abundance of fruit. Avoid letting your fruit go bad and up your fruit intake with these healthy recipes.
Ice Trays. This handy kitchenware is for more than freezing water. Use your ice cube trays to create a tantalizing treat to add in your teas or cocktails. Raspberries or watermelon mixed with water make for the best fruity ice cubes.
Healthy Smoothies. Bananas and mangoes always ripen quickly, which makes them a great option for a smoothie base. Take 1-2 bananas or mangoes and simply blend with 1 cup of milk, ¼ cup of yogurt and 1 cup ice. Play around with the flavors by adding in spices like cinnamon, chia seeds or other fruits.
Wholesome Ice Cream. Take your smoothie a step further and create an ice cream! Take 4-5 ripe bananas and freeze them in a plastic bag overnight. In the morning, cut the frozen bananas into pieces and place them in a food processor. After 45-60 seconds the bananas will be a perfectly blended, creamy dessert. Store your homemade ice cream in the freezer for up to two days.
Apple Sandwich. An apple sandwich is an easy way to mix up the ordinary eating of an apple. Simply slice the apple into flat sections and add a nut butter in-between. Get extra creative by rolling raisins or nuts into the peanut butter too. You’ll love it!
Rolled Pancake Fruit Tacos. This recipe calls for the most preparation but is still very simple. Create the pancake roll first:
- 2 eggs
- 1 large, ripe banana (mashed)
- 2 TBSP of flour
- 1 TSP baking powder
- ¼ TSP cinnamon
- 1 TSP vanilla extract
Scramble the eggs along with the other ingredients together in a bowl and then add in the mashed banana. Once the mixture is whisked together, pour it into a frying pan and flip on each side until it is bubbly and brown. After you take the pancake-like “taco shells” of the skillet, add your choice of a greek yogurt and sliced fruits to be placed in the center of the rolled shell.
